Pulled Pork Burger

Rinse the pork shoulder and rub dry. 2
For the spice mixture, mix the paprika, brown sugar, salt, garlic powder, oregano, coriander seeds and chili flakes and rub half of the mixture into the meat. Vacuum seal and leave to marinade for 12 hours. 3
Preheat the water bath to 62 degrees and cook the pork for 24 hours. 4
Remove the meat from the water bath and leave to cool. Retain the cooking juices. Preheat the oven to 200 degrees. Pat the meat dry with paper towel. Mix the honey, BBQ sauce, vinegar and soy sauce. Brush over the meat. Divide the rest of the spice mixture over the meat. 5
Place the meat on a wire rack and place a metal tray under the meat. Cook the meat in the oven until a nice crust has formed. Brush with the cooking juices while the meat is cooking. 6
Finely chop the cabbage and season with salt, sugar and pepper. Mix thoroughly with your hands and place to one side for a few minutes. Stir through the cider vinegar, chopped parsley, crème fraiche and grated apple. 7
Cut the burger baps in half and fry briefly in a pan cut-side down without oil. 8
Spread over the rest of the BBQ sauce. Shred the pulled pork with 2 large forks and arrange with the cabbage on the burger baps
