Lime posset with mango sauce

A super tangy, creamy pudding scented with lime zest and served topped with a bright mango puree.

Instruction

Peel the mango and cut off the fruit on either side of the large pit in the center. Add the mango to the mixing bowl.

Add two tablespoons sugar, water, and one tablespoon of lime juice to the mixing bowl. Blend the sauce for 45 seconds / speed 8. Scrape the mango sauce into a small bowl, cover tightly with plastic wrap, and refrigerate.

Add the remaining sugar and the cream to the mixing bowl. With the measuring cup removed, cook for 5 minutes / 130°C (265°F) / speed 1.

Continue cooking for 5 minutes / 90°C (195°F) / speed setting 1. Add the remaining six tablespoons of lime juice and the lime zest and stir in for 20 seconds / speed 1.

Divide the posset among six small custard cups, ramekins, or glasses. Refrigerate until set, at least 4 hours and up to overnight.

Top each serving with a spoonful of mango sauce.
