Buttery sugar–free cookie dough that’s safe to eat raw!
Cut butter into cubes. Add butter, monk fruit sweetener, salt, and vanilla to the mixing bowl and mix for 20 seconds / speed 4.
Add almond flour and coconut flour to the mixing bowl and mix for 20 seconds / speed 3.
Scrape down the sides of the mixing bowl with the spatula.
Mix again for 30 seconds / speed 3. Scrape down the sides of the mixing bowl.
Add chocolate chips to the mixing bowl and mix for 20 seconds / speed 3 / reverse.
Portion mixture using 2 tablespoons of dough per piece.
Roll each portion into a ball and place on a plate.
Cover with plastic wrap and refrigerate for 30 minutes before serving, or store
Different brands of monk fruit sweetener have different properties.
You may need to add more monk fruit sweetener than called for, so taste the dough and add more as needed.
If you would like to substitute a concentrated monk fruit extract, use much less than called for or add more as needed.
