Ginger carrots with cheese dumplings and goat cheese

Instruction

Wash, peel and slice the carrots. Slice the ginger and vacuum seal together with the lime zest, garlic, chili flakes, lemongrass and cardamom. Preheat the water bath to 85 degrees. Cook the carrots for 70 minutes.;

Cut the bread into cubes and add to a bowl. Bring the milk to the boil and pour over the bread cubes. Season with salt, pepper and nutmeg. Leave to infuse for approximately 10 minutes. Crumble the Alpine cheese into the mixture. Add the eggs and parsley and mix together carefully using your hands. Leave to infuse again for a few minutes.

Remove the carrots from the water bath and add to a pan. Leave to simmer for a few minutes together with the orange and lime juice.

Heat the butter and oil in a pan. Using a spoon, shape the dumpling mixture into small dumplings and fry on all sides until golden brown. Then transfer to a preheated oven and cook for around 10 minutes at 170 degrees.

Arrange the dumplings with the carrots. Crumble the goat cheese over the top

Recipe notes

You can also use soft goat cheese instead of normal goat cheese. This results in a slightly less intense flavor and fluffier consistency.
